The **Kai Shun Engetsu Limited Edition Chinese chef's knife** is a limited edition Chinese chef's knife from the Engetsu collection. A collection with 1996 kitchen knives in total, divided over three different kitchen knives. This Chinese chef's knife, a santoku and a chef's knife. With this Engetsu collection Kai is celebrating the 20th anniversary of the Kai Shun brand. This Chinese chef's knife is enhanced with an 18 cm long blade and was produced only 248 times.

## The blade from the Kai Shun Engetsu collection

Engetsu means 'full moon'. You can see this full moon when you look at the stunning blade. This full moon, however, is not a simple drawing or engraving. The knife is comprised of two types of steel: VG10 and VG2. These types of steel are layered. As such you see the familiar, horizontal damascus pattern at the start and end of the blade. In the middle of the blade, however, these layers are completely intertwined in order to imitate the surface of the moon. A unique and very complicated damascus pattern we haven't seen before. In addition to this nice pattern, the top-quality types of steel ensure you end up with a hard, razor-sharp and stainless blade.

## The handle of the Kai Shun Engetsu collection

The symmetrically-shaped handle is made from pakka wood and enhanced with a deep-blue and black wood grain that might remind you of a dark night sky. Because of the forged bolster and the massive steel back the handle is nicely balanced and feels great in hand. This limited edition knife comes in a stunning wooden storage box with a numbered certificate of authenticity.

Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
