Full description
The Kaji series by Kai are named after the Japanese word for ' blacksmith '. Only the blacksmiths that make the best Samurai swords can carry this name. In line with this tradition Kai has developed these kitchen knives. The blade is made out of a hard type of steel. The core of SG-2 steel has 32 layers of damask steel around it. The extreme hardness of 64 HRC and the Japanese type of sharpening make a knife with superior cutting qualities and retains its sharpness extremely well. The finish of the blade makes the wavy damask come out beautifully.
