The **Wüsthof honing steel** has a length of 26 cm. It is made from 115 CrV3 steel, a very hard type of steel. The plastic handle is a little coarse. As such you have more grip over the honing steel, even when your hands are wet, for instance.

When choosing a honing steel, make sure you use one with the right length. The rule of thumb is that your honing steel needs to be as long as the longest knife you want to hone. So also keep the extra-long chef's knife you wish to purchase in the future in mind.

## When do you use a honing steel?

You use a honing steel to make a knife that is already in a good shape, a little sharper. You move your knife over it before you use it. A honing steel does not remove material, but ensures that the microscopic metal particles are neatly realigned again. You basically straighten out the burr that emerges as you use your knives on a regular basis. This is also the main difference between a honing steel and sharpening steel. ## Maintaining a Wüsthof honing steel.

Maintaining a honing steel is easy. If you use it on a regular basis, it will become a little darker. You can easily clean it with a paper towel and some olive oil or sunflower oil. The plastic handle is also easy to clean.
