This Wüsthof Classic cheese knife is a practical knife to cut semi-hard and hard cheeses. The length of the blade is short for a reason. As such the young cheese won't collapse as you cut it. I had been looking to build on my collection of Wusthof knives with a hard cheese knife for a while, so excellent quality and value. Its a shame the blade is as high as it is as I had to use one of the other slots in my knife block and take a other out, not a major problem though, I have purchased from here before, excellent service and speed of delivery from the Netherlands, and staff very helpful.
