This Wüsthof Classic ham knife is enhanced with a long, thin and somewhat flexible blade. As such you have a lot of control over the knife when you cut extremely thin slices of meat or fish. Think of (salmon)carpaccio or thin slices of ham. The dimples in the blade make sure air comes in between the product and the blade. As such the slices won't stick to the blade.
