Looking for a santoku knife that’s a cut above the rest?


The Twin Cermax line represents the epitome of the craftsmanship of Zwilling J.A.Henckels.  
  


To put it more simple, these knives are the best they make.  

The metal used for the blades consist of a new type of powdered steel called Cermax, with a Rockwell hardness of 66 (!)  

This is extremely hard for any knifesteel, and especially for a kitchenknife which is usually somewhere inbetween 54- 60 Rockwell.  

This superhard steel is 'sandwiched' between 2 layers of softer, but much tougher steel to create what we think to be the perfect kitchenknife.  

To top things off the handle is inlayed with polished black Micarta with a beautiful grain.  
  

When you order one of these knives, or more, be especially careful because these are by far the sharpest knives right out-of-the-box we have ever seen.  

They are able to cut freestanding hair on your arm with ease.  
  

**Maintenancetips:**


* Do not ever try to clean these fine knives, or any other fine knife, in a dishwasher, as it will ruin their appearance and make them blunt as well.

* For sharpening we recommend the Spyderco Sharpmaker, elsewhere on our site.

Dit mes is werkelijk erg duur, maar als fanatieke hobbyist in de keuken is het echt fantastisch om mee te werken. Het mes oogt alleen al zeer kwalitatief hoogstaand met de zeer fijne afwerking van de Micarta greep en het lemmet. Als je dit mes voor het eerst uit de verpakking haalt dan voel je meteen dat je kwaliteit in je handen hebt. Het mes is naar mijn smaak precies zwaar genoeg, wat in combinatie met de ergonomische greep en de scherpte van het mes ervoor zorgt dat je geen kracht hoeft te zetten bij zowel het ciseleren alsmede het hakken van je ingrediënten. Dit mes zorgt ervoor dat het snijden van ingrediënten een plezier wordt. Ik heb er uiteindelijk voor gekozen om deze santoku, ondanks de hoge prijs, toch te kopen met het idee dat het net zo lang mee gaat als ikzelf. Hebt u een hobby en/of passie voor koken en bent u op zoek naar een vlijmscherp kwaliteitsmes dat vele verschillende messen overbodig maakt, dan kunt u bij dit mes stoppen met zoeken. Ik raad dit mes niet aan voor mensen die onderontwikkelde snijtechniek hebben, want dan zou ik eerst beginnen met een goedkoper mes uit de Zwilling of Wusthof reeks. Scheelt je vingers en je portemonnee, en als je wat geoefender bent en het mes dan aanschaft, zul je zien dat zo'n mes ruimschoots overtroffen wordt door dit stukje kwaliteit van Zwilling. Verder ben ik tevreden over de service die K&T mij heeft geboden bij de aanschaf van dit product en wat andere, vanaf nu is dit mijn eerste adres voor alles wat ik eventueel zoek omtrent messen en toebehoren.
