If you wanted a pan to attack someone with, this is it - it's heavy, but not too heavy. The thing that screams out is the quality of manufacture - it is superb, and European, so no dodgy Chinese metal. The handle remains surprisingly cool in the holding area, but can get extraordinarily hot where it is riveted to the pan, and this pan can get hot, really really hot. It cooks beautifully and inspires confidence in the cook. 'Zen' is a phrase bandied about when something is 'just right' for the job - the De Buyer Acier Carbone has it in spades - it's a tool you buy for a lifetime of cooking. It is, simply, wonderful. Remember to season it as per instructions - I used rapeseed oil as it was all I had, and it worked well, scorching a nice brown, and remember the browner it gets the more non-stick it gets. One thing to bear in mind is that the size measurement of the pan applies to the outer rim - so you need to loose a good few centimetres off of that to get the cooking surface. If in doubt, buy slightly bigger. You won't regret buying one though - it is an incredibly reasonably priced, professional quality pan made to last a lifetime. Oh and service, pricing and delivery from Knives and Tools was fantastic - 2 days from Holland to Scotland - that's quicker than stuff can take to arrive from England!
