Hand-forged Japanese utility knife with a blade length measuring 13.5 cm from the Eden Susumi series.

Hand-forged utility knife. A Japanese knife with a blade length of 13.5 cm from the Eden Susumi collection. Eden Kanso Susumi knives are thin and razor-sharp. The SG2 powder steel is stainless and, with a hardness of 62-63 HRC, rock-solid. Next to that the side of the steel is also considerably harder than is common for damascus steel. This means that the side of the knife is much better protected from scratches.

## Nice SG2 steel blade

The blade of this knife is made from SG2 powder steel, hence the name. This is a type of steel with a very fine structure and a hardness of 62-63 HRC. Because of this hardness you can sharpen the Susumi knives extremely thin. The knives are corrosion resistant and the damascus steel has the same hardness as the SG2 core. The knives are more scratch-resistant than most knives made from damascus.

## Traditional red sandalwood handle

The handles are made from red sandalwood, a type of rosewood. Perfect for a Japanese knife such as this. The handle has a traditional Japanese D-shape. As such the knife feels comfortable in hand. Because of the asymmetric design, however, this knife is suited for right-handed use. 

## Sharpening Eden Susumi kitchen knives

Don't sharpen these knives in a pull-through sharpener! Because of the rock-solid steel and the sideways movements that occur in a pull-through sharpener pieces of the edge could break off. We therefore advise you to carefully sharpen by hand on a sharpening stone, sharpening steel or with a sharpening system.

Eigentlich ist es fast überflüssig eine Beurteilung zu schreiben. 
Die Beschreibung erzählt alles wichtige über dieses Messer. Das wesentliche ist aber, dass es im Gegensatz zu diversen Voodoo- Messern anderer Hersteller, de man angeblich nie schleifen muss alle Träume spielend erfüllt. 
Ich habe dieses Messer gekauft, als es vor vielen Jahren hier neu angeboten wurde und es schneidet wie am ersten Tag. Diese Bestellung ist daher ein Geschenk. 

Overall an attractive looking knife, very light, good feeling/fitting handle (though this obviously a personal view/choice), blade very thin and sharp out of the box, only been using it for a few weeks so will have to see how long it stays sharp and then how easy it is to resharpen, hence 4 stars at moment - if it's good on those two counts would get 5 stars.
