Nakiri from the DP collection from Tojiro. 

Tojiro is one of the largest Japanese knife brands. This innovative brand has won numerous design awards. Traditional Japanese techniques are combined with modern production methods. The Tojiro kitchen knives are razor-sharp and very sustainable. 

For knives there is always a compromise between hardness (sharp, but brittle and less stainless) and flexible (less sharp and less brittle, more stainless). Tojiro opted for a multi-layer construction. The core is made from VG10 steel surrounded by 13-chrome steel. This leaves you with a unique combination of hardness and a much higher corrosion-resistance than with carbon steel. 

The handle is made from black ECO with three rivets. This is a combination of plastic and recycled wood. This is even more sustainable than pakka wood.

Arrived nicely packed and in a presentation cardboard box.
Very nice to look at. Would have liked a nicer handle but that was my price choice. Functional, easy to grip and keep clean.
Very sharp and easy to use. My wife loves it as its easier to cut large veg - e.g. butternut squash

Ho acquistato questo coltello qualche settimana fa e lo uso praticamente tutti i giorni. Risulta molto ben bilanciato, l'impugnatura è comoda anche per una mano grande come la mia, il peso si sente ma non è eccessivo. Anzi, secondo me aiuta a tagliare meglio le verdure più compatte come le carote. Anche se la lama non è alta come quella di una mannaia cinese, le nocche non battono sul tagliere e questo è un gran vantaggio tagliando con la tecnica "tap chop". Forse un paio di millimetri in più in altezza avrebbero fatto comodo ma va molto bene anche così. Ha un filo eccezionale e, dato che la lama è in acciaio inossidabile, non è necessario pulirlo perfettamente subito dopo il suo utilizzo. Non avevo mai utilizzato un nakiri ma lo consiglio vivamente a chi cucina tante verdure come il sottoscritto.

Griezelig scherp mes. Ook al heb je geen trek in groeten bij je eten, dit mes nodigt je uit om toch grote hoeveelheden  te snijden.  Prima aankoop. 

Na lang twijfelen over mijn nieuwe keukenmessen besloten om een Tojiro Santoku, Nakiri en Officemesje te kopen. Nu een week of drie in mijn beziten geen seconde spijt gehad. Vlijmscherp en een goede balans, een genot om mee te snijden. Zelf nog een Deba mes uit dezelfd serie besteld want die was niet te krijgen bij knivesandtools. Mijn collectie is nu compleet. Voor het onderhoud de Eden slijpset erbij besteld. Slijpstaaf  is, zoals iedereen al zegt, geweldig. De slijpstenen zijn voor mij nieuw dus ik oefen eerst op mijn oude messen, gaat prima met de uitleg op de site, zoalmg je het maar beheerst doet.

Over knivesandtools, geweldige site. Dit was niet mijn eerste bestelling en zeker niet mijn laatste. Ruim assortiment, lage prijzen en snel en netjes verpakt verzonden. Top! Jammer  is da ik nu zie dat je in de zomeractie een zakmes cadeau krijgt. Die zou ik er graag bij hebben gehad......
